Strawberry Butterscotch Macarons are a delectable combination of fruity and sweet flavors. The light and airy macaron shells are filled with luscious strawberry jam and drizzled with creamy butterscotch sauce. Perfect for any special occasion or simply as a sweet treat to enjoy.

Instructions
- Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius).
- Using parchment paper, line a baking sheet.
- Sift together the powdered sugar and almond flour in a medium mixing bowl.
- In a large mixing bowl, whisk the egg whites until foamy.
- Add the granulated sugar gradually and continue to beat until stiff peaks form.
- Beat in a few drops of pink food coloring until evenly colored.
- Fold in the almond flour mixture until completely incorporated.
- Fill a piping bag halfway with the mixture and pipe 1-inch rounds onto the prepared baking sheet.
- Tap the baking sheet a few times on the counter to release any air bubbles.
- Allow the macarons to sit at room temperature for 30 minutes to form a skin.
- Bake the macarons for 18-20 minutes, or until set and with formed feet.
- Remove from the oven and cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
- To make the filling, in a small saucepan over medium heat, heat the strawberry jam until it comes to a simmer.
- Remove from the heat and set aside to cool to room temperature.
- Heat the butterscotch chips and heavy cream in a small saucepan over low heat, stirring constantly, until the chips have melted and the mixture is smooth.
- Remove from the heat and set aside to cool to room temperature.
- Spread a thin layer of strawberry jam on the flat side of a macaron and sandwich it with another.
- Repeat with the rest of the macarons.
- Drizzle the macarons with the cooled butterscotch mixture.
- Allow the macarons to come to room temperature for 30 minutes to allow the filling and butterscotch drizzle to set.
- Serve and have fun.
