Instructions

  • In a mixing bowl, combine the almond flour, powdered sugar, and cocoa powder.
  • Separately, whisk the egg whites until frothy, then add the cream of tartar and continue to whisk until soft peaks form.
  • Add the granulated sugar and vanilla extract gradually, beating until stiff peaks form.
  • Fold the dry ingredients into the egg white mixture gently but thoroughly.
  • Fill a piping bag with a round tip with the mixture.
  • Pipe small circles of the mixture onto a parchment-lined baking sheet.
  • Allow the macarons to form a skin at room temperature for 30 minutes.
  • Preheat the oven to 300°F (150°C), and bake the macarons for 15-18 minutes, or until set but not browned.
  • Remove the macarons from the oven and allow them to cool completely before removing them from the baking sheet.
  • Sandwich the macarons with your favorite filling once they've cooled.
