Lime and Green Apple Macarons Recipe

Instructions

  • Sift together almond flour and powdered sugar in a medium mixing bowl.
  • Whisk together the egg whites, granulated sugar, and cream of tartar in a separate large mixing bowl until stiff peaks form.
  • Fold the almond flour and egg white mixture together until completely combined.
  • Fold in the green food coloring, lime zest, and green apple flavoring until the batter is smooth and evenly colored.
  • Fill a piping bag with a round tip with the batter.
  • Pipe small rounds onto a baking sheet lined with parchment paper, then tap the sheet against the counter to release any air bubbles.
  • Allow the macarons to rest for 30 minutes to an hour at room temperature, or until a thin shell forms on the surface.
  • Preheat the oven to 300 degrees Fahrenheit.
  • Bake for 12-15 minutes, or until the shells are set and just beginning to brown.
  • Before removing the macarons from the baking sheet, allow them to cool completely.
  • In a large mixing bowl, cream the butter until smooth and creamy.
  • Add powdered sugar gradually and continue to beat until the mixture is light and fluffy.
  • Beat in the green apple flavoring, vanilla extract, and green food coloring until thoroughly combined.
  • Fill a piping bag with a round tip with the filling.
  • Pipe the filling onto one macaron's flat side and sandwich with another.
  • Repeat with the remaining macarons.
  • Refrigerate the macarons in an airtight container for up to 1 week.
