Instructions
- Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius).
- Two baking sheets should be lined with parchment paper.
- Whisk together the powdered sugar, almond flour, and green tea powder in a medium mixing bowl.
- Place aside.
- In a large mixing bowl, whisk the egg whites until foamy on medium speed.
- Gradually incorporate the granulated sugar, increase the speed to high, and beat until stiff peaks form.
- Mix in the orange food coloring until it is evenly distributed.
- Sift the almond flour and egg white mixture together.
- With a rubber spatula, gently fold the mixture together until the batter is smooth and shiny.
- Fill a piping bag with a round tip with the batter.
- Pipe 1-inch circles onto the prepared baking sheets, about 1 inch apart.
- To release any air bubbles, gently tap the baking sheets on the counter.
- Allow the macarons to rest for 30 minutes, or until a skin forms on top.
- Bake for 12-15 minutes, or until the macarons are set and no longer wiggle when gently touched.
- Before removing the macarons from the baking sheets, allow them to cool completely.
- To make the cream cheese filling, in a medium mixing bowl, combine the cream cheese and butter until smooth and creamy.
- Beat in the powdered sugar, vanilla extract, and grated carrot until well combined.
- Fill a piping bag with a round tip with the filling.
- Pipe a small dollop of filling onto one macaron's flat side and top with another macaron.
- Rep with the rest of the macarons and filling.
- Refrigerate the macarons for at least 30 minutes before serving.
