Green Tea and Carrot Cake Macarons are a delicious twist on the classic French pastry. The delicate green tea flavor balances out the sweetness of the carrot cake filling, making these macarons ideal for any occasion.

  • Cook Time: 15 minutes
  • Total Time: 1 hour

Instructions

  • Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius).
  • Two baking sheets should be lined with parchment paper.
  • Whisk together the powdered sugar, almond flour, and green tea powder in a medium mixing bowl.
  • Place aside.
  • In a large mixing bowl, whisk the egg whites until foamy on medium speed.
  • Gradually incorporate the granulated sugar, increase the speed to high, and beat until stiff peaks form.
  • Mix in the orange food coloring until it is evenly distributed.
  • Sift the almond flour and egg white mixture together.
  • With a rubber spatula, gently fold the mixture together until the batter is smooth and shiny.
  • Fill a piping bag with a round tip with the batter.
  • Pipe 1-inch circles onto the prepared baking sheets, about 1 inch apart.
  • To release any air bubbles, gently tap the baking sheets on the counter.
  • Allow the macarons to rest for 30 minutes, or until a skin forms on top.
  • Bake for 12-15 minutes, or until the macarons are set and no longer wiggle when gently touched.
  • Before removing the macarons from the baking sheets, allow them to cool completely.
  • To make the cream cheese filling, in a medium mixing bowl, combine the cream cheese and butter until smooth and creamy.
  • Beat in the powdered sugar, vanilla extract, and grated carrot until well combined.
  • Fill a piping bag with a round tip with the filling.
  • Pipe a small dollop of filling onto one macaron's flat side and top with another macaron.
  • Rep with the rest of the macarons and filling.
  • Refrigerate the macarons for at least 30 minutes before serving.
