- To make the macarons: Preheat the oven to 300°F (150°C) and prepare a baking sheet with parchment paper.
- Sift together the almond flour and powdered sugar in a medium mixing bowl.
- In a large mixing bowl, whisk the egg whites until soft peaks form.
- Add the granulated sugar gradually and continue to beat until stiff peaks form.
- Mix in the food coloring until well combined.
- The almond flour mixture should be folded in until the batter is smooth and shiny.
- Fill a piping bag halfway with batter and pipe 1-inch circles onto the prepared baking sheet.
- To release any air bubbles, gently tap the baking sheet on a flat surface.
- Allow 15 minutes for the macarons to form a skin at room temperature.
- Bake for 15-20 minutes, or until the macarons are set but still slightly soft in the center.
- Before removing the macarons from the baking sheet, allow them to cool completely.
- In a large mixing bowl, cream the butter with an electric mixer until light and fluffy.
- Beat in the powdered sugar gradually until smooth.
- Beat in the strawberry puree and vanilla extract until well combined.
- Fill a piping bag halfway with the filling.
- To put together: Pair the macarons in similar sizes and shapes.
- Pipe a small amount of filling onto one macaron's flat side and top with the other macaron.
- Rep with the rest of the macarons and filling.
- Serve the macarons immediately or refrigerate them in an airtight container for up to 3 days.
