Almond Macarons Recipe

These delicate and delicious almond macarons are suitable for any occasion. They require some patience and technique, but the end result is well worth it.

  • Total Time: 1 hour, 20 minutes

Instructions

  • Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius) and line baking sheets with parchment paper.
  • Sift together the almond flour and powdered sugar in a medium mixing bowl.
  • In a large mixing bowl, whisk together the egg whites and cream of tartar until frothy.
  • Gradually add the granulated sugar, then beat on high until stiff peaks form.
  • Combine the vanilla extract and food coloring (if using) in a mixing bowl.
  • Fold in the almond flour mixture gently until the batter is smooth and glossy.
  • Fill a piping bag with a round tip with the batter.
  • Pipe the batter into 15-inch-diameter circles on the prepared baking sheets.
  • Tap the baking sheets a few times on a flat surface to release any air bubbles.
  • Allow the macarons to rest for 30 minutes at room temperature, or until a skin forms on top.
  • Bake the macarons for 18-20 minutes, or until they are set but not browned.
  • Remove from the oven and set aside on the baking sheets to cool completely.
  • When the macarons are cool, carefully remove them from the parchment paper and arrange them in groups of similar sizes.
  • Sandwich together with your desired filling (such as buttercream or ganache).
