These Rocky Road Macarons are a delicious take on the traditional French pastry. They have a delicious and chewy texture thanks to the chocolate, almonds, and marshmallows.

  • Total Time: 45 minutes

Instructions

  • Preheat the oven to 300°F (150°C) and prepare a baking sheet with parchment paper.
  • Sift together the powdered sugar and almond flour in a medium mixing bowl.
  • Whisk the egg whites until frothy in a large mixing bowl.
  • Whisk in the cream of tartar, salt, and granulated sugar until stiff peaks form.
  • Fold in the vanilla extract and powdered sugar mixture gradually until the mixture is smooth and glossy.
  • Fill a piping bag halfway with the mixture and pipe small rounds onto the prepared baking sheet.
  • Allow the macarons to rest for 15 minutes after tapping the baking sheet on the counter to remove any air bubbles.
  • Half of the macarons should be topped with chopped almonds, mini marshmallows, and chocolate chips.
  • To make a sandwich, top with the remaining macarons.
  • Bake for 15-18 minutes, or until the macarons are set and the shell is crisp.
  • Allow to completely cool before serving.
