Tangerine Caramel Macarons Recipe

The rich and buttery tangerine caramel filling has a refreshing citrus kick. These macarons are ideal for a special occasion or a sweet treat on any given day.

Instructions

  • In a mixing bowl, sift together the almond flour and powdered sugar.
  • Separately, whisk the egg whites with an electric mixer until they begin to foam.
  • While continuing to beat the egg whites, gradually add the granulated sugar until stiff peaks form.
  • To the egg white mixture, add the tangerine oil or zest and a few drops of orange food coloring.
  • Fold in the almond flour and powdered sugar mixture gently until just combined.
  • On a baking sheet lined with parchment paper, pipe the mixture into small circles.
  • Allow the macaron shells to cool for 30-60 minutes, or until a skin forms on top.
  • Preheat the oven to 300°F (150°C) and bake the macarons for 12-15 minutes, or until set but not browned.
  • Remove the macarons from the oven and cool completely before filling them.
  • Heat the granulated sugar in a heavy-bottomed saucepan over medium heat, stirring constantly, until it melts and turns a deep amber color.
  • Remove the saucepan from the heat and whisk in the heavy cream and unsalted butter gradually.
  • Incorporate the tangerine zest.
  • Allow the caramel to reach room temperature.
  • Sandwich two macaron shells with a dollop of the tangerine caramel filling.
