Tangerine Caramel Macarons Recipe

Instructions
- In a mixing bowl, sift together the almond flour and powdered sugar.
- Separately, whisk the egg whites with an electric mixer until they begin to foam.
- While continuing to beat the egg whites, gradually add the granulated sugar until stiff peaks form.
- To the egg white mixture, add the tangerine oil or zest and a few drops of orange food coloring.
- Fold in the almond flour and powdered sugar mixture gently until just combined.
- On a baking sheet lined with parchment paper, pipe the mixture into small circles.
- Allow the macaron shells to cool for 30-60 minutes, or until a skin forms on top.
- Preheat the oven to 300°F (150°C) and bake the macarons for 12-15 minutes, or until set but not browned.
- Remove the macarons from the oven and cool completely before filling them.
- Heat the granulated sugar in a heavy-bottomed saucepan over medium heat, stirring constantly, until it melts and turns a deep amber color.
- Remove the saucepan from the heat and whisk in the heavy cream and unsalted butter gradually.
- Incorporate the tangerine zest.
- Allow the caramel to reach room temperature.
- Sandwich two macaron shells with a dollop of the tangerine caramel filling.
