- Prep Time: 45 minutes
- Cook Time: 20 minutes
- Total Time: 1 hour, 5 minutes
- Preheat the oven to 300°F (150°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, combine powdered sugar, almond flour, and cocoa powder.
- In a separate mixing bowl, beat egg whites until foamy on medium speed.
- Continue to beat until soft peaks form after adding the cream of tartar.
- Gradually add the granulated sugar, beating on high speed until stiff, glossy peaks form.
- Fold the dry ingredients into the egg white mixture gently until just combined.
- Transfer batter to a piping bag fitted with a round tip and pipe small circles onto a baking sheet lined with parchment paper.
- To release any air bubbles, tap the baking sheet on a flat surface.
- Allow the macarons to rest for 30 minutes at room temperature to form a skin on top.
- Bake for 18-20 minutes, or until the macarons are firm and easy to remove from the parchment paper.
- Allow the macarons to completely cool on the baking sheet.
- To make the chocolate filling, bring the heavy cream to a simmer in a small saucepan.
- Remove from the heat and stir in the chocolate chips.
- Stir until the chocolate is completely melted and the mixture is smooth.
- Stir in the softened butter until well combined.
- Filling should be transferred to a piping bag fitted with a round tip.
- Pipe a small amount of filling onto one macaron's flat side and sandwich with another.
- Continue with the remaining macarons and filling.
- Refrigerate macarons in an airtight container for up to 5 days.
