Instructions

  • Two baking sheets should be lined with parchment paper.
  • Sift together the powdered sugar and ground almonds in a medium mixing bowl.
  • Beat the egg whites with an electric mixer in a large mixing bowl until frothy.
  • Continue to beat the egg whites with the granulated sugar, cream of tartar, and salt until stiff peaks form.
  • Fold in the almond mixture until just combined with the egg whites.
  • Fill a piping bag with a 1/2-inch round tip with the batter.
  • Pipe 1-inch circles onto the prepared baking sheets, leaving at least 1 inch between them.
  • Tap the baking sheets' bottoms on a flat surface to release any air bubbles.
  • Allow the macarons to form a skin at room temperature for 30 minutes.
  • Preheat the oven to 300 degrees Fahrenheit.
  • Bake the macarons for 15-18 minutes, or until the tops are set and the bottoms can be lifted without sticking from the parchment.
  • Allow the macarons to completely cool on the baking sheets.
  • Place the chopped chocolate in a heatproof bowl to make the ganache.
  • Heat the heavy cream in a small saucepan until it is just simmering.
  • Allow the cream to sit for 1 minute on top of the chocolate.
  • Combine the chocolate and cream until smooth and glossy.
  • Fill a piping bag with a small round tip with the ganache.
  • Pipe a small amount of ganache onto half of the macarons' flat sides.
  • Place the remaining macarons on top, gently pressing to sandwich the ganache.
  • Serve immediately or refrigerate in an airtight container for up to 3 days.
