- Preheat the oven to 300°F (150°C) and prepare a baking sheet with parchment paper.
- In a food processor, combine and finely chop the powdered sugar, almond flour, and cocoa powder.
- Beat the egg whites until foamy in a large mixing bowl, then gradually add the granulated sugar, cream of tartar, and vanilla extract, beating until stiff peaks form.
- In two batches, fold in the dry ingredients, being careful not to overmix.
- Fill a piping bag with the mixture and pipe small circles onto the prepared baking sheet.
- Allow the macarons to sit for 15 minutes to form a skin after gently tapping the baking sheet on the counter to release any air bubbles.
- Bake for 18-20 minutes, or until the macarons are firm on top.
- Allow the macarons to completely cool on the baking sheet.
- Heat the black cherry jam in a small saucepan until it is warm and spreadable.
- Melt the chocolate chips and heavy cream in a separate bowl in the microwave or over a double boiler, stirring until smooth.
- Sandwich half of the macarons with the black cherry jam and the other half with the chocolate ganache.
- Refrigerate the macarons in an airtight container for up to 3 days.
