Instructions

  • In a food processor, combine the almond flour, powdered sugar, and grapefruit zest.
  • Whisk the egg whites until foamy in a large mixing bowl.
  • Continue whisking until stiff peaks form after gradually adding the granulated sugar.
  • Gently fold in the almond flour mixture into the egg whites with a spatula until the batter is smooth and glossy.
  • Fold in a few drops of pink gel food coloring until the batter is evenly colored.
  • Fill a piping bag with a round tip with the batter.
  • Pipe the batter into small rounds about 1 inch in diameter onto a baking sheet lined with parchment paper.
  • Tap the baking sheet on a flat surface to remove any air bubbles and set aside for 30 minutes to form a skin on the macarons.
  • Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius).
  • Bake for 12-15 minutes, or until the shells are set and easily remove from the parchment paper.
  • Allow the macarons to cool completely before filling with grapefruit buttercream or jam of your choice.
  • Refrigerate for at least 30 minutes before serving the macarons sandwiched together.
