Instructions
- Preheat the oven to 325°F.
- Using parchment paper, line a baking sheet.
- Pulse almond flour and confectioners' sugar in a food processor until well combined.
- Whisk egg whites, granulated sugar, and cream of tartar in a separate mixing bowl until stiff peaks form.
- Fold in the almond mixture until just combined with the egg white mixture.
- Fold in the rose extract and food coloring until fully incorporated.
- Fill a piping bag fitted with a round tip with the mixture.
- Pipe 1-inch circles onto a baking sheet lined with parchment paper, leaving space between each one.
- Allow the macarons to rest for 30 minutes to form a skin on the surface.
- Bake for 12-15 minutes, or until the macarons are firm and beginning to brown.
- Remove from the oven and set aside to cool.
- In a small saucepan, heat the cream until it is just simmering.
- Remove from the heat and stir in the chocolate chips and rose water until smooth.
- Allow the ganache to cool for 10 minutes before transferring to a piping bag fitted with a small round tip.
- Pair macaron shells of similar size and shape.
- Pipe a thin layer of ganache onto one shell and sandwich with the other.
- Refrigerate the macarons for at least two hours before serving.
