Instructions
- Preheat the oven to 300°F (150°C) and prepare a baking sheet with parchment paper.
- Pulse the almond flour and powdered sugar in a food processor until well combined, then sift into a large mixing bowl.
- Separately, whip the egg whites until stiff peaks form.
- Gradually add the granulated sugar and beat until the mixture is glossy and stiff peaks form.
- Fold in the almond flour mixture until completely incorporated.
- Fill a piping bag fitted with a round tip with the mixture and pipe small circles onto the prepared baking sheet.
- Allow the macarons to rest for 20 minutes to form a top skin.
- Bake for 18-20 minutes, or until the macarons are set and the shell is slightly crispy.
- While the macarons cool, make the filling in a small saucepan over medium heat by whisking together the ground star anise, brewed espresso, heavy cream, and butter.
- Cook until the mixture thickens and bubbles, then remove from the heat and set aside to cool completely.
- Sandwich a small amount of filling between two macaron shells once the macarons and filling have both cooled.
- Refrigerate the macarons in an airtight container for up to 5 days.
